Classic Jewish Forshmack

Forshmack, which means “snack” and can be written like Vorschmack in German, is considered to a popular dish that is prepared from  chopped meat or herring, with addition of some potatoes, onion, peppers and sour cream.

In Prussian and Swedish cuisines, forshmak is thought to be a rather hot snack. But herring Forshmak is referred exclusively to the classical Jewish cuisine. It often does not contain meat, but the recipe, in addition to herring, includes eggs, apple, onions, white bread and margarine.

In the Jewish cuisine, this dish has become national, although originally it was borrowed from the East Prussian one, where meant the so-called appetizer from roasted herring. In the Jewish cuisine fordshmak was transformed into a cold snack made from herring.

What products to take

  • Salted herring – 1 pc.
  • Onions – 1 pc.
  • Apples – 1-2 pieces.
  • Wheat loaf without crust – 1 piece
  • Butter – 50 g
  • Sugar – 0.5 tsp.
  • Vinegar 9% – 0.5 tsp.
  • Green onion – to taste
  • Milk – 50 g

How to prepare the dish

 Step 1

Gut the herring. If it is too salty, we recommend you to hold it in milk for 2-4 hours.

Step 2

Make a fillet.

Step 3

Take bones away, chop the meat finely or pass it through a meat grinder.

Step 4

Peel the onion and wash it. Chop it carefully and finely, sprinkle with sugar and vinegar.

Step 5

Soak the prepared bread in the milk. Then carefully mash it with a fork.

Step 6

Peel an apple and chop it finely.

Step 7

Mix all the ingredients in a large bowl. Add butter, ground pepper, a little vinegar to this mass and mix it again well.

Step 8

Forshmak has to be put into a salad bowl. Garnish your dish with green onions.
