Jewish “Hummus” paste

Nowadays Hummus paste is especially popular in the countries arranged in the Middle East, for example, in  Israel, Syria, Jordan, Turkey and Lebanon, as well as in European Cyprus and Greece. This delicious product is usually served as a cold snack or even a sauce.

Traditionally people take humus with  with pita or lavash, but there are some  regions sometimes, where the local prefer it with corn chips, bread, etc. In recent years, hummus has been gaining popularity in the US and other developed countries among vegetarians and people unable to eat gluten and food containing it.

We especially recommend to taste delicious hummus during the lent, as it is considered to be rather tasty and very useful for our organism.

What products to take

  • Chickpea – 500 g
  • Lemon – 1 pc.
  • Sesame paste – 5 tbsp
  • Vegetable oil (olive) – 2 tbsp. spoons
  • Garlic (optional) – 2-3 cloves
  • Salt – to taste
  • Spices (cumin, coriander, paprika, red pepper) – to taste

How to prepare this dish

If you can not find sesame paste in the nearest shop, please, don’t worry, as you can do it yourself without any troubles. The only thing you should do is fry the sesame seeds in a frying pan. Do it until the moment, when a pleasant smell appears. After that take your blender and grind everything with the addition of sesame (olive) oil until the relatively smooth condition.

Step 1

Wash chickpeas carefully.

Step 2

Chickpea should be put into the pot, and after that some cold water is added.Soak it for 3-4 hours (overnight). Drain the water and pour fresh water. Put on fire and bring to boiling condition.

Step 3

Boil your chickpeas on low heat until it cooks. It will take you 1-2 hours. Broth is usually left in a glass, as you may need it then.

Step 4

Take 1-2 tbsp. of chickpeas. You will need them for decoration. Blender will help you to create a homogeneous mass.

Step 5

Chickpeas are added with some lemon juice, sesame paste, salt and spices. If you like you can add the garlic.

Step 6

Use your blender again. You can add a little broth to chickpeas.

Step 7

Your “Hummus” paste is ready. Put it into a bowl, decorate with boiled chickpeas and herbs. After that sprinkle with some olive oil and serve.
