Before we introduce this dish we would like to remind that sponge cake or biscuit is so-called confectionery pastry or “bread”, made from flour, sugar and eggs. However, in English-speaking countries the term “biscuit” is often used for other products.
In order to get a biscuit of better quality, which is much softer, the egg yolks must be separated from the whites and thoroughly beaten with sugar or powdered sugar until the volume increases by at least twice.
There is also a “vegan” kind of a biscuit, in which the fastening component (in this case egg) is replaced by starch diluted in water. If we do dough without a starch or eggs, the biscuit quickly “falls off”. In order to get a light biscuit, you need to separate the whites from the yolks.
What products to take
- Whites – 5 pieces
- Sugar powder – 80 grams
- Sugar – 50 grams
- Flour – 60 grams
- Salt (optional) – 1 pinch
- Citric acid – half a teaspoon
- Vanilla – to taste
How to prepare this dish
Sponge cake recipe is considered to be rather easy, the only things, that you should do is follow the proposed steps.
To begin with, we need to pre-sift flour with powdered sugar. Then heat the oven to about 175 degrees.
An important rule is not to forget to use only dry cookware without any fat. Take it, pour the whites and salt.
Then whisk the whites with a mixer for 8-10 minutes. After this, add the requested amount of sugar, vanilla and citric acid into the bowl.
Then continue whipping the whites. As a result you should get “soft peaks” as in the photo.
The next step is to pour the flour with the powdered sugar into the whites. Stir your dough until the smooth condition. All these actions should be done extremely accurately.
Cover the mold with parchment paper without any lubrication. And put the dough into this mold.
And now we will tell you a little secret: the middle part of your sponge cake won’t fall off during the baking, for 5 proteins it is better to use a mold of rectangular shape measuring 10×20 cm or a round one as an additional, but with a small diameter and with a hole in the middle.
Send the mold to the heated oven. Bake for about half an hour. It is important: do not open the oven!
Ready sponge cake must be turned directly in the form upside down. This will help to prevent sponge cake falling off.
We recommend you to leave the turning down sponge cake into the oven, which is switched off and open for 40 minutes to cool down gradually.
You have done almost everything! Carefully remove the sponge cake from the mold.
It looks perfectly, doesn’t it? It is better to let the biscuit cool down completely and then cut it with a sharp knife.
