Polish cabbage soup is prepared not only in Poland. This soup is very popular in Ukraine, Russia and Slovakia. Among all kinds of cabbage, there are insignificant differences, but the main ingredient remains unchanged. It is sour cabbage.
You can add mushrooms, cereals and greens to the cabbage soup.The acidity of the soup can also be adjusted. To make the soup less acidic, sour cabbage must be pressed out and washed under cold running water before cooking.
What products to take
- Pork ribs – 300g
- Sour cabbage – 300g
- Dry mushrooms – 20g
- Onions – 1 onion
- Bay leaf – 1 piece
- Black pepper – 6 pcs.
- Juniper berries – 5 pcs.
- Sugar – 1 teaspoon
- Barley groats – 40 g. You can replace it with wheat.
- Smoked bacon – 100g
- Potatoes – 500g
- Smoked fat – 50g
- Onion – 1 item
How to prepare this dish
Pork is poured by 2 liters of water and put on fire. When it boils, we will remove the foam and reduce the heat. Let’s add a bay leaf, pepper and juniper berries. Cook it for 30 minutes. Mushrooms are soaked in warm water.Then strain them carefully. Add the water from the mushrooms to the broth.
Mushrooms and onion are chopped finely and added to the broth. We add sour cabbage, sugar and a pinch of salt. If the cabbage is very sour, wash it. Cook it for 40-50 minutes. For 20 minutes before the end of the cooking, add to cabbage soup some fine-ground barley and the smoked bacon cut into cubes.
Separately we have to boil peeled potatoes.
Сut finely the fat and fry onion on the fat until golden color.
Finished sour cabbage soup should be left away for 10-15 minutes. Groats will swell and the Polish soup will become quite dense. The soup should be poured into the plate, sprinkled with herbs and freshly ground pepper. Separately to cabbage soup give boiled potatoes with fried onions.
