Ukrainian cabbage soup with chicken and millet

Cabbage soup is a national Ukrainian and Polish dish prepared with sour cabbage, the recipe of which reminds the traditional Russian soup. At the same time, due to its characteristic taste, it is kept apart from other dishes, similar to the way they are cooked.Sour soup with millet is a hearty dish for the whole family, which can be cooked any day mostly for lunch.

What products to take

  • Broiler chicken – 0,5 pcs.
  • or chicken legs – 2 pcs.
  • Sour white cabbage – 300 g
  • Potatoes – 3-4 pic
  • Millet – 0.5 cups
  • Carrots – 1 pic
  • Onion – 1 pc.
  • Vegetable oil – 3-4 tbsp.
  • Parsley greens – 0.5 bunches
  • Sugar – 1 tsp.
  • Bay leaf – 1 pc.
  • Tomato paste (optional) – 1-2 tsp.
  • Sour cream (for serving) – to taste
  • Pepper – to taste
  • Salt – to your own taste
  • Water – 2.5 liters

How to prepare this dish

Step 1

Chicken should be washed, put it in a saucepan and covered with cold water. Boil. Reduce heat to a minimum and cook under the lid for 40 minutes.

Step 2

Now it is time to clean, to peel and to wash potatoes, onions and carrots. Cut potatoes into pieces, onions – into cubes, and carrots – into thin straws.

Step 3

Boil the kettle. Rinse the millet thoroughly, pour with boiling water for 10 minutes (in order to remove the bitterness). Then the water has to be drained.

Step 4

When the chicken is ready, take it out. Into the boiling broth you should put millet, potatoes, half of onions and carrots. Cook cabbage with millet on a small fire under the lid for 15 minutes.

Step 5

Preheat the frying pan and pour there some vegetable oil. Put there the second half of onions and carrots. Stew on medium heat, stirring for 2-3 minutes.

Step 6

Rinse the sour cabbage and squeeze it. Put into the frying pan. Stew all together, stirring, for 5-7 minutes (you can add 3-4 tablespoons of broth).

Step 7

In the case of necessity add tomatoes. Mix everything thoroughly. Stew for 1-2 minutes.

Step 8

Wash and chop the greens finely.

Step 9

Put the roast sauce into the soup. Salt, pepper, add bay leaves and sugar if you want. Boil the cabbage with millet under the lid for 10 minutes. Add greens, remove the dish from heat.

 Step 10

A cabbage with chicken and millet is ready. Serve it together with sour cream. You can serve chicken separately or put it into a bowl.
