- Zucchini – 1 kg;
- Pepper – 500 g
- Onions (1-2 pcs.)
- Carrots – 1 pic
- Tomato (200 g)
- Garlic – 4-5 large cloves
- Sugar – 2 tsp
- Salt – to taste;
How to prepare the dish
In order to make the process of Korean zucchini cooking not too long, prepare the vegetables in advance. Zucchini should be washed and dried carefully. Cut the bottom parts from both ends and cut the vegetables into half-rings of about half a centimeter thick.Onion should be cut into thin half-rings, and carrots – elongated straw. If you have a grater, that is suitable for Korean carrot grinding, use it.
Wash the tomato thoroughly and remove the place from the stalk. Slice the tomato into thin rings or small cubes. Pepper should be washed and a part of seeds has to be removed. Seeds guarantee the level of your dish spicy taste. That is why, if you don’t want to breath like a real dragon, peel the pepper from the seeds inside, leaving only a part of them. Cut the pepper into thin strips.
Preheat the frying pan and add a little vegetable oil. When it heats, put there the chopped onion and pass it until it becomes soft. When the onion becomes transparent, send to the frying pan finely chopped tomatoes and chopped carrots.
Stew them for several minutes, then add hot pepper, cut into strips to the tomatoes. When the pepper becomes soft and almost cooked, put the cut zucchini into the frying pan and mix everything thoroughly.
Now set the maximum fire and fry the vegetables for 5-7 minutes, stirring constantly. Then turn off the fire. While the vegetables are getting more saturated, peel the garlic and pass it through the press immediately to the zucchini. After the garlic, add salt, sugar and dried ground coriander. Stir the vegetables thoroughly with spices.
